We have just released our latest Limited Series bar, Las Islas. You will only be able to purchase this special bar at Whole Foods markets across the country and directly from Scharffen Berger, our online market or our shops.

We call these bars Limited Series because they are made in small batches and once the lot has been sold, they cannot be replicated. To keep track of our Limited Series bars, we are beginning to number them. Las Islas is Limited Series No. 7.

From time to time, we obtain cacao beans that are so delicious they can stand on their own, rather than being part of a blend, like our other chocolates.

Las Islas, or the islands, is a blend of three different cacao beans from three Caribbean islands: Trinidad, Jamaica and the Dominican Republic. It is 72% Cacao.

 

  

The combination of these three cacao bean varieties produces a bright flavor, with mild acidity and a clean finish.

This bar has soft citrus notes with hints of orange peel, similar to flavors in marmalade. The tannins are low and combined with its mild acidity, the rounded chocolate taste has a long, smooth finish.

Because growing conditions impact the flavors of cacao, the tastes produced by beans can vary from year to year. That is why we say that when the batch is sold, we simply cannot replicate the flavors. At that time, we will evaluate our cacao beans and develop our next Limited Series, No. 8.
