Livbane's Small Batch Banana Chocolate Pancakes

Livbane's Small-batch banana chocolate chip pancakes for one! 


1/2 cup
1/4 teaspoon
baking soda
1/8 teaspoon
 melted butter or coconut oil (use oil for dairy-free)
1 large banana
2 tablespoons
milk (use almond milk for dairy-free)
SCHARFFEN BERGER Bittersweet 70% cacao chocolate baking chunks


    1. In a blender, blend oats until they resemble flour.
    2. Add baking soda and salt and pulse until combined.
    3. Add melted oil or butter, banana, 1 egg, and milk, and blend until just combined, and then stir in chocolate chunks.
    4. Place a skillet over medium-low heat. Let the batter rest for five minutes while the skillet preheats.
    5. Spoon batter onto griddle as 4-5 small pancakes and cook for 3-4 minutes, until the facedown side is lightly golden.
    6. Turn with a spatula and cook for 3-4 more minutes.
    7. Top with honey or maple syrup, if you’d like, and serve!
