Ingredients
2 tablespoons | golden flaxseed meal |
3 tablespoons | water |
2 tablespoons | almond butter |
2 tablespoons | coconut oil |
⅓ cup | ⅓ cup |
1 teaspoon | vanilla extract |
1 ⅓ cup | blanched almond flour |
1 tablespoon | coconut flour |
½ teaspoon | baking soda |
¼ teaspoon | fine Himalayan salt |
1 cup | a mix of SCHARFFEN BERGER 62% Semisweet Dark Chocolate Baking Chunks & 70% Bittersweet Dark Chocolate Baking Chunks |
Directions
- Add all ingredients to a bowl (except the chocolate). Mix until combined.
- Fold in the chocolate using a spoon.
- Scoop the dough onto a cookie sheet lined with parchment paper, flattening the cookie tops.
- Bake for 8 to 10 minutes in an oven preheated to 350°F.
