I used to be a professional baker and this chocolate is a five stars plus. I was using a good unsweetened chocolate (not found on the grocery shelves) but decided to try Scharffen Berger's Unsweetened Dark Chocolate.
Definitely a game changer!

. . that the 9.7 oz. bars of baking chocolate have now been replaced with 4 oz. bars at an increased price . . serious baking with these "candy bar" sizes is now ridiculous. After doing taste tests of all the major serious baking chocolates on the market, Scharffenberg won by a long shot, having none of the cellulose (straw-ish) taste found in virtually all of the others . . but I guess I'll have to revisit the taste test now . .
