Finally, I found an appropriate replacement for the classic Scharffen Berger 70% Cacao Bittersweet Fine Artisan Dark Chocolate (light blue) 9.7 oz bars! These flats have a very similar muted sweetness compared to the 70% cacao bittersweet dark chocolate baking portions, which while tasty, have too much sugar in them for my taste. The 82% Cacao Simply Dark Chocolate Flats even have the advantage of being pre-divided into "flats." Despite being more expensive, I highly recommend these for those who liked the old bar.

I'm finding the smaller bits of chocolate easier to use in baking, though kinda wish you'd have something between the 9 oz bars and the small bits.
I've been using Scharffenberger chocolate for baking for years. It melts perfectly smooth and has a good depth of flavors. Keep it coming!
